Ingredients:

  • Tilapia fillet from Regal Springs Indonesia: 200 g
  • Garlic oil: 3 tbsp
  • Unsalted butter: 20 g

 

Marinade ingredients:

  • Minced garlic: 3 cloves
  • Chopped onion: 15 g
  • Lime juice: 1 tbsp
  • Salt: ½ tsp
  • Ground black pepper: 1 tsp
  • Grated ginger: 1 cm piece
  • Powdered broth: 1 tsp
  • Tomato sauce: 3 tbsp
  • Worcestershire sauce: 2 tbsp
  • Sweet soy sauce: 1 tbsp
  • Oyster sauce: 1 tbsp
  • Pure honey: 5 tbsp
  • Ice water: 50 g

 

Sambal ingredients:

  • Garlic: 6 cloves
  • Shallots: 2 cloves
  • Red bird’s eye chilies: 50 g
  • White part of lemongrass: 2 stalks
  • Torn kaffir lime leaf: 1 leaf
  • Salt: 1 tsp
  • Sugar: 2 tsp
  • Powdered broth: 1 tsp
  • Garlic oil: 100 ml
  • Lime: 2 fruits

Instructions:

  1. Prepare a bowl and mix all the marinade ingredients. Stir well.
  2. Add the Tilapia fillets to the marinade, stir to coat evenly, and let it sit for 10 minutes.
  3. Using a food processor, blend the sambal ingredients except for the lime.
  4. Heat a pan and add the blended sambal mixture. Stir well.
  5. Cook over high heat for 1 minute, then reduce to low heat and cook for 4-5 minutes.
  6. Turn off the heat, add the lime juice, stir well, and set aside.
  7. Heat a grill pan, add the garlic oil and unsalted butter, and let it melt.
