Ingredients

Ingredients:

  • Regal Springs Indonesia Tilapia Fillet: 200 g
  • Lime: 2 pieces
  • Salt: 1 1⁄2 tsp
  • Black pepper powder: 1⁄2 tsp
  • Crushed galangal: 2 cm
  • Crushed lemongrass: 1 stalk
  • Shredded lime leaves: 2 pieces
  • Cloves: 5 pieces
  • Nutmeg: 1⁄2 piece
  • Cinnamon: 3 cm
  • Palm sugar powder: 1 tbsp
  • Stock powder: 1 tsp
  • Sweet soy sauce: 2 tbsp
  • Liquid coconut milk: 250 ml
  • Onion oil: 3 tbsp

Fine spices:

  • Shallots: 5 cloves
  • Garlic: 4 cloves
  • Large red chilies: 2 pieces
  • Curly red chilies: 10 pieces
  • Red cayenne pepper: 5 pieces
  • Roasted candlenut: 2 pieces
  • Roasted coriander: 2 tsp
  • Roasted galangal: 2 cm
  • Roasted ginger: 2 cm
  • Fried peanuts: 40 g
  • Roasted shrimp paste: 1 tsp

Toppings: Sambal Bawang

Instructions

How to make:
1. Marinate the Tilapia with 1⁄2 tsp salt, black pepper and 1 lime juice.
2. Heat the onion oil, add the ground spices then saute until fragrant.
3. Add lemongrass, galangal, lime leaves, cloves, nutmeg and cinnamon. Saute
again.
4. Add salt, palm sugar, sweet soy sauce, powdered broth and coconut milk. Stir
slowly.
5. After the water content has reduced, add the Tilapia and lime juice. Stir
slowly.
6. Cook for 1 minute and turn off the heat. Let it sit for 10 minutes for the spices to soak in. 7. Heat the grill pan, grill the Tilapia and the spices until browned. Turn off the heat and remove.
