Tilapia Satay

Ingredients

  • Regal Springs Tilapia Fillet: 200 g, diced into small cubes.
  • Lime juice: 1 tbsp.
  • Satay skewers.

Peanut Sauce Ingredients

  • Peanuts: 200 g.
  • Shallots: 3 cloves.
  • Garlic: 2 cloves.
  • Candle nuts: 2 seeds.
  • Red chili peppers: 3 pieces.
  • Grated palm sugar: 1 tbsp.
  • Water, granulated sugar, and salt: as needed.

Marinade Ingredients

  • Sweet soy sauce: 5 tbsp.
  • Peanut sauce: 2 tbsp.
  • Kaffir lime juice: 1 tbsp.
  • Cooking oil: 1 tbsp.

Accompaniments

  • Lontong (compressed rice cake).
  • Pickles.
  • Sweet soy sauce.
  • Fried shallots.
  • Bird’s eye chili sauce.

Instructions

  • Coat the diced Tilapia fillet with lime juice and thread them onto satay skewers.
  • Mix all the marinade ingredients together, coat the satay with the marinade, and let it marinate for 30 minutes.
  • Prepare the peanut sauce by frying the peanuts until crispy, then add garlic, shallots, candle nuts, and red chili peppers. Remove from heat.
  • Blend all the fried peanut sauce ingredients with a little water.
  • Cook the blended peanut sauce until thickened and oil separates.
  • Grill the marinated Tilapia satay over charcoal until cooked.
  • Serve the Tilapia satay with the peanut sauce and accompaniments.
