Ingredients
- Regal Springs Tilapia Fillet: 200 g, diced into small cubes.
- Lime juice: 1 tbsp.
- Satay skewers.
Peanut Sauce Ingredients
- Peanuts: 200 g.
- Shallots: 3 cloves.
- Garlic: 2 cloves.
- Candle nuts: 2 seeds.
- Red chili peppers: 3 pieces.
- Grated palm sugar: 1 tbsp.
- Water, granulated sugar, and salt: as needed.
Marinade Ingredients
- Sweet soy sauce: 5 tbsp.
- Peanut sauce: 2 tbsp.
- Kaffir lime juice: 1 tbsp.
- Cooking oil: 1 tbsp.
Accompaniments
- Lontong (compressed rice cake).
- Pickles.
- Sweet soy sauce.
- Fried shallots.
- Bird’s eye chili sauce.
Instructions
- Coat the diced Tilapia fillet with lime juice and thread them onto satay skewers.
- Mix all the marinade ingredients together, coat the satay with the marinade, and let it marinate for 30 minutes.
- Prepare the peanut sauce by frying the peanuts until crispy, then add garlic, shallots, candle nuts, and red chili peppers. Remove from heat.
- Blend all the fried peanut sauce ingredients with a little water.
- Cook the blended peanut sauce until thickened and oil separates.
- Grill the marinated Tilapia satay over charcoal until cooked.
- Serve the Tilapia satay with the peanut sauce and accompaniments.
